For the first time in history alternative meat/dairy products are voted for tasting better than their real counterparts.

NotCo is the most funded company in LatAm. It defines itself as a tech company first and foremost. Why? Because it uses artificial intelligence to mimic precisely the taste of the real deal or to make it even better…

Founded in Chile—the third largest consumer per capita of mayonnaise—it launched in 2017 with NotMayo. The product soon inspired non-vegans to join the bandwagon thanks to its delicious taste.

How it works

Their AI is called Giuseppe. Giuseppe has the taste profiles as well as the chemical compositions of thousands of plants.

Did you know that in Western supermarkets we tend to eat only 20 varieties of vegetables? There are actually over 300,000 edible plants on Earth.

Giuseppe’s algorithm analyses the composition of an animal derived product: say milk or cream, and offers the plant-based recipe alternative that will produce the most similar taste.

Then a group of experienced food-tasting analysts tries the different combinations and chooses the most delicious.

Why it’s inspiring:

NotCo is on a clear mission: to make plant-based food accessible to all with very very delicious alternatives. We need delicious plant-based alternatives so that the majority of people join the bandwagon. If your Starbucks latte taste the SAME or BETTER than its cow milk counterpart, there is a higher chance that more people will change their habit. Let’s face it, most people won’t change their habits for the good of humanity, but they will do it if their taste buds agree with the change.

Where to find NotCo

Today you can find NotCo products in the USA, Mexico, Argentina, Brazil and Chile. In each country you will find NotCo products in Starbucks, WholeFoods, Amazon, and Burger King. Yes. Plant-based is going mainstream.
