Their AI is called Giuseppe. Giuseppe has the taste profiles as well as the chemical compositions of thousands of plants.

Giuseppe’s algorithm analyses the composition of an animal derived product: say milk or cream, and offers the plant-based recipe alternative that will produce the most similar taste.
Then a group of experienced food-tasting analysts tries the different combinations and chooses the most delicious.
